Considered by many as New Zealand's most delicious fish, rāwaru or blue cod (Parapercis colias) is Ngāi Tahu Seafood's most popular fin fish. It is caught in the cool inshore waters off the South Island in pots, in the same way that lobsters are caught for Ngāi Tahu Seafood by lobster fishers.

While blue cod is caught year-round, supply can be limited at times. Fortunately, the fish freezes very well, and frozen fillets can be provided to markets when required.
